Lemon Broccolini


I discovered broccolini while watching Food Network and I have been hooked ever since. This recipe is a cinch and requires very few ingredients. Broccolini pairs well with a nice juicy steak, chicken, or even fish. My only recommendation for this recipe is to start with juice and zest of one lemon, then add more if you think it's necessary.

Ingredients:

2 bunches broccolini

2 tbs salted butter

2 cloves garlic, minced

salt & pepper

1-2 lemons, zest and juice

Directions:

Bring a pot of water to a boil and prepare an ice water bath. Blanche the broccolini in boiling water for around 2 minutes, then transfer to the ice water. In a large skillet (does not have to be cast iron), melt the butter on medium-high heat and add garlic. Drain your broccolini in paper towel, then transfer to the skillet and toss to coat with butter and garlic. Season with salt and pepper. Add lemon juice and zest, then cook for a few minutes.
