I said I would post this recipe soon and I lied! Life and the holidays got in the way, but I've finally found some time to type this up for you all. This recipe is only for the apple filling. If you're looking for the dough and vanilla glaze directions, those are found under the Classic Cinnamon Rolls recipe. The process is exactly the same, just replace the cinnamon sugar filling with this apple filling.

Ingredients:
4 apples (your choice - try Granny Smith or Cortland), diced
1/2 cup butter
1 cup lightly packed brown sugar
1/2 cup heavy cream
1 tsp ground cinnamon
Directions:
Make your dough according to the directions found under Classic Cinnamon Rolls. You will have to allow 1 hour for the dough to rise, so plan ahead. About 5 minutes before the time is up, start preparing your apple filling. You may want to make 1.5x this recipe if you want a lot of filling (pictures is about 1/2).

Saute the apples in a large skillet over medium-high heat for 3-4 minutes. Remove and set aside. In the same skillet, reduce the heat to medium and add the butter and brown sugar until the butter melts and sugar dissolves, then pour in the heavy cream stirring until the mixture thickens and starts to bubble, about 1 minute. Turn the heat to low and add the apples. Sprinkle with cinnamon, stirring until it thickens, about 1-2 minutes. Allow filling to cool. You're now ready to roll out your dough on a floured surface and start making the cinnamon rolls! Just a reminder that those directions can be found here: Classic Cinnamon Rolls.
