It's been a while since I posted something savory, let alone healthy! Inspiration for this salad/grain bowl comes from my current favorite menu item from B.GOOD, their Local Apple & Bacon grain bowl. What I really like about this recipe is that you feel full afterwards, and of course, it has bacon! I'll be honest and tell you that I added another slice of bacon after taking this photo...
The amount of ingredients below are just a suggestion, you can add more/less based on your taste. I especially liked the addition of pomegranate seeds and added way more than 2 tbsp, but they're not for everyone. Also, B.GOOD does not offer the option of Israeli cous cous on their menu and adds sunflower seeds and dried cranberries.
Ingredients:
1/2 cup dry Israeli cous cous (or similar grain, like quinoa or buckwheat if gluten-free)
2-3 slices of thick-cut bacon (I like Trader Joe's ends and pieces)
2 handfuls kale
1 small apple, sliced
1 small avocado, sliced
3 tbs pomegranate seeds
2-3 scallions, sliced
3 tbsp seasoned sunflower seeds
1/2 lemon, juiced
Sunflower or grapeseed oil, to taste
Red wine or apple cider vinegar, to taste
Salt, to taste
Directions:
Cook cous cous/grain according to package instructions. Cook bacon until crispy, drain excess grease. Assemble all ingredients in a medium bowl and dress with lemon, oil, vinegar and salt to taste. Finish by topping with bacon.
