I have this meal regularly because it’s high in protein and low in fat and carbs without sacrificing flavor.
The whipped feta adds a nice tough but if you don’t have a food processor you can just add some crumbled feta and call it a day (or night).
If you’re feeling extra adventurous you could try making your own pita and tzatziki but not everyone (including myself) has time for that! I made my own pita once and while the dough itself is easy to make I really struggled with heating/cooking it on my stovetop and my oven doesn’t reach the desired temperature. Oh well, theres nothing wrong with store-bought pita. Let me know in the comments if there’s a particular brand you like!
Servings: 4
Ingredients (meatballs):
1 lb ground chicken or turkey
1/4 cup regular or breadcrumbs
2 garlic cloves, minced
2 tbsp chopped fresh parsley
1 lemon, zest
1 tsp dried oregano
1/2 tsp dried dill weed
1/2 tsp salt
1/2 tsp pepper
1 tbsp olive oil
Ingredients (whipped feta)*:
6 oz feta
3-4 tbsp roasted red pepper (in oil)
*I get at least 6 portions from this
Ingredients (pita):
Pita bread*
Cucumber, diced
Tomato, diced
Red onion, sliced
Tzatziki*
*You can make your own, too
Directions (meatballs):
Combine all ingredients minus the olive oil in a bowl and combine with your hands. Divide into 4 equal portions then make 8 small meatballs from each portion (total 32 meatballs). Heat oil on a large skillet. Place meatballs into skillet and cook the meat balls until the center is no longer pink.
Directions (whipped feta):
Combine feta and red peppers in a food processor. Blend until combined. Use a spoon or spatula to scrape down the sides of the bowl.
Directions (pita):
You can either fold your pita in half or cut it in half and fill the inside. Spread some whipped feta onto your pita then add meatballs, cucumber, tomato and red onion. Top each pita with 1-2 tbsp of tzatziki.
