Instant Pot Butternut Squash Soup

It’s cozy season! This is one of my favorite easy and delicious winter-inspired soups.

Servings: 6
Ingredients:
1 medium white onion
1 lb butternut squash (I buy the pre cut package)
1 carrot, pellets
1 Granny Smith apple, cored
2 cups vegetable stock
Pinch of cayenne (optional)
1/2 tsp nutmeg
Salt to taste
1/2 cup coconut milk
Directions:
Roughly chop your vegetables and place them in your Instant Pot along with the vegetable stock and spices. Mix, cover, and pressure cook on high for about 10 minutes. Let
